Ingredients (4 people):
9 oz. (250 g) Cous Cous
12 oz. (350 g) Chicken breast
7 oz. (200 g) Rocket
2 tbsp Butter
10 Cherry tomatoes
1 tbsp Oil
I beat the chicken breast.
I cut chicken abd tomatoes into serving pieces.
I heat butter in a pan, then I add the chicken.
Meanwhile, in a saucepan, I bring 20 tbsp (300 ml) of water to a boil.
Once the water starts boiling, I add salt.
I remove from heat I add oil and cous cous.
Be sure to allow the couscous to absorb the water.
I allow to sit it for about 5 minutes with a cover.
I brown a little bit the chicken, then I add olives, sultanas, tomatoes and 1 teaspoon of salt.
I mix the cous cous with the chicken.
I remove from heat and I add the rocket.
