Preparation time: 40 minutes

Ingredients (6 people):
4 Eggs
17,6 oz. (500 g) Mascarpone cheese
2,8 oz. (80 g) White sugar
1,27 US cups (300 ml) Coffee
11 oz. (300 g) Ladyfingers (Savoiardi)
Powder Cocoa
I prepare coffee.
In a large bowl I whisk 3 yolks with the sugar.
(I put the 4th yolk in a bowl, at the end of the recipe you can find what to do with it)
I add mascarpone cheese and I continue to whisk, till the cream becames smooth.
In another bowl I beat the egg whites untill stiff.
(I have always problem with this step, so I add a pinch of salt, which stimulates the formation of the foam).
I gently mix the egg whites with the cream.
I put a little bit of coffee in a plate.
Now, an important step: I lightly soak the ladyfingers in the coffee, one at a time. Don't be too fast or too slow. I turn them two times and then I wet the edges. (It's difficult to explain, look at video).
I place them in the pan on the same hand.
I distribute part of the cream over the fingers.
I place another layer of ladyfingers (I place them in the opposite side) and I top them with the cream again.
I put it in the fridge for 3 hours.
Before serving it, I sprinkle it with the cocoa powder.
That's all!
ps. What to do with the left ingredients:
I whisk the yolk with sugar.
I add Marsala wine and coffee, then I continue to whisk.
